Mango Cupcakes with...
This year when my birthday rolled around, I decided I was gonna “keep it real” and bake with something that reminds me of the motherland: MANGOS. Since I come from a tropical people, mangos used to grow in my folks’ backyards and my grandfolks’ backyards. It was a time-honored tradition to break off the mangos, squeeze all of the pulp, adding milk/yogurt and ice cubes....

Peanut Butter Pie with Chocolate Crust
Ingredients:
Crust
1 1/4 cups chocolate cookie crumbs OR vgn chocolate graham crackers (finely crushed)
1/4 cup sugar
1/4 cup earth balance butter, softened
Pie Filling
1 (16 ounce) package silken or soft tofu
1 cup creamy peanut butter
3/4 cup sugar
2 tbsp. almond/rice/or soy milk
2 tsp. vanilla extract

Girl scout cookie season has arrived! And to get in the festive spirit, I baked up a batch (even though my girl scout days are long gone). Samoa cookies were always my favorite type of girl scout cookie, although I was always confused by the name. Not sure if it has anything to do with the Pacific Islanders. Can anyone illuminate the reason behind the name? Apparently now the Girl Scout Assocation...

Penny Licks on Bedford Ave.
Just Desserts at a visit to Penny Licks, my favorite bakery in Willyburg. Clockwise: strawberry ice cream, Vegan Treats carrot cake, and pumpkin flavored whoopie pie.
