Mango Cupcakes with...
This year when my birthday rolled around, I decided I was gonna “keep it real” and bake with something that reminds me of the motherland: MANGOS. Since I come from a tropical people, mangos used to grow in my folks’ backyards and my grandfolks’ backyards. It was a time-honored tradition to break off the mangos, squeeze all of the pulp, adding milk/yogurt and ice cubes....

Idli w. Coconut Chutney
South indian food has a special place in my heart & belly. When my favorite S. Indian restaurant in NYC shut its doors, I decided to try & recreate some of the standouts on my own. Here is a relatively easy (but time consuming) recipe for making the breakfast/snackin item Idli: Mix 1 cup of urad daal (soaked in water for 8 hours) + 2 cups of grounded up rice (cream of rice) and ferment...

Samoa cookies
Girl scout cookie season has arrived! And to get in the festive spirit, I baked up a batch (even though my girl scout days are long gone). Samoa cookies were always my favorite type of girl scout cookie, although I was always confused by the name. Not sure if it has anything to do with the Pacific Islanders. Can anyone illuminate the reason behind the name? Apparently now the Girl Scout Assocation...

Penny Licks on Bedford Ave.
Just Desserts at a visit to Penny Licks, my favorite bakery in Willyburg. Clockwise: strawberry ice cream, Vegan Treats carrot cake, and pumpkin flavored whoopie pie. We really wanted the $1.00 penny licks cone speciality (The cone is very tiny, but the amount of ice cream is surprisingly fulfilling), but apparently the distributor is out of business for the winter season, and they didn’t...

Pb&J Cupcakes!
After neglecting baking in general for quite awhile, I finally got back into the cupcake groove & decided to try to recreate one of my favorite meals in the form of a cupcake: peanut butter & jelly! The results were quite good, and even the naysayers were won over! Here’s a quick recipe for the vanilla cake (vanilla adapted from the one in Vegan Cupcakes Take Over the World) with...
