Peanut Butter Pie with Chocolate Crust

Ingredients:

Crust

  • 1 1/4 cups chocolate cookie crumbs OR vgn chocolate graham crackers (finely crushed)
  • 1/4 cup sugar
  • 1/4 cup earth balance butter, softened

Pie Filling

  • 1 (16 ounce) package silken or soft tofu
  • 1 cup creamy peanut butter
  • 3/4 cup sugar
  • 2 tbsp. almond/rice/or soy milk
  • 2 tsp. vanilla extract
  • 2 tsp. maple syrup (optional)

Directions:

Combine 1 1/4 cup cookie crumbs, 1/4 cup sugar, and 1/4 cup butter; press into a 9 inch pie plate. Bake at 375 degrees for 10 minutes. Cool.

In a blender or food processor, combine tofu, peanut butter, sugar, maple syrup, milk, and vanilla until smooth. Spoon filing into crust. You can garnish the pie with chocolate or cookie crumbs if you like. I chose the cookie crumbs, but I bet chocolate drizzled would be a bangin’ addition. Once you got the toppings on, refrigerate for about two hours at least. and Voila!
